Instructions

  1. Begin by preheating your oven to 230°C (450°F). While the oven warms, prepare your ramekins by greasing the insides thoroughly with softened butter. After greasing, dust the ramekins with cocoa powder to ensure easy removal of the cakes later. This step is crucial to achieving the perfect presentation.
  2. In a microwave-safe bowl, combine the chopped baking chocolate with unsalted butter. Heat this mixture in the microwave in 30-second intervals, stirring well after each interval. Continue this process until the chocolate and butter are fully melted and smooth. It’s important to watch closely to avoid burning the chocolate.
  3. In a large mixing bowl, whisk together the four whole eggs, egg yolks, and granulated sugar. Mix until the texture turns pale and fluffy, typically around 2 to 3 minutes.
