Instructions

- Cream the butter and granulated sugar using an electric mixer until light and fluffy.

- Gradually add the dry ingredients into the wet mix, stirring until dough forms.
- Incorporate the finely chopped pistachios into the dough.
- Scoop tablespoon-sized dollops of dough and roll them into balls.
- Bake for 10-12 minutes until edges turn golden. Cool on a rack.
- In a bowl, whisk powdered sugar, heavy cream, vanilla extract, and a pinch of salt for the filling.
- Apply pistachio cream on one cookie and sandwich with another.
