- 1 cup pumpkin purée
- 2 large eggs
- ½ cup vegetable oil
- 1¾ cups all-purpose flour

- ⅓ cup brown sugar

- 1 tsp baking soda

- ½ tsp ground nutmeg
- ¼ tsp ground ginger
- ¼ tsp ground cloves
- For the Streusel Topping:
- ¼ cup brown sugar
- ¼ cup all-purpose flour
- ½ tsp ground cinnamon
- 2 tbsp cold butter, cubed
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a mixing bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
- In a separate bowl, blend the vegetable oil, white sugar, brown sugar, and eggs. Stir in the pumpkin purée and water.
- Gently fold the dry ingredients into the wet mixture. Pour into the prepared loaf pan.
- For the streusel, combine the flour, brown sugar, and cinnamon in a bowl. Add the butter and mix until crumbly. Spread over the batter.
- Bake for 60 to 70 minutes. Cool in the pan for 10 minutes, then transfer to a wire rack.
