Ingredients

  • 1 cup pumpkin purée
  • 2 large eggs
  • ½ cup vegetable oil
  • 1¾ cups all-purpose flour
  • 1 cup white sugar
  • ⅓ cup brown sugar
  • ¼ cup water
  • 1 tsp baking soda
  • ½ tsp salt
  • 1½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • ¼ tsp ground cloves
  • For the Streusel Topping:
  • ¼ cup brown sugar
  • ¼ cup all-purpose flour
  • ½ tsp ground cinnamon
  • 2 tbsp cold butter, cubed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a mixing bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  3. In a separate bowl, blend the vegetable oil, white sugar, brown sugar, and eggs. Stir in the pumpkin purée and water.
  4. Gently fold the dry ingredients into the wet mixture. Pour into the prepared loaf pan.
  5. For the streusel, combine the flour, brown sugar, and cinnamon in a bowl. Add the butter and mix until crumbly. Spread over the batter.
  6. Bake for 60 to 70 minutes. Cool in the pan for 10 minutes, then transfer to a wire rack.
