  • 4 large eggs
  • 2 tbsp all-purpose flour
  • 1/2 cup raspberry puree (strained to remove seeds)
  • For the topping:
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • Fresh raspberries and mint leaves for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare the crust by mixing graham cracker crumbs with melted butter and sugar, then pressing into a springform pan.
  2. Make the filling by beating cream cheese and sugar until smooth, adding sour cream, vanilla, and eggs one at a time, then folding in flour.
  3. Assemble the cheesecake by pouring half the filling over the crust, dolloping raspberry puree, and swirling before adding the remaining filling and puree.
  4. Bake in the oven for about 55 minutes, then cool in the oven to prevent cracks.
  5. Cool completely, whip heavy cream with powdered sugar, and spread over the cheesecake.
  6. Garnish with raspberries and mint before serving.
