  • 1 ½ cups crushed chocolate sandwich cookies (like Oreos)
  • ¼ cup melted butter
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup semi-sweet chocolate chips
  • ½ cup caramel sauce (plus extra for drizzle)
  • 1 teaspoon sea salt flakes
  • Extra chocolate chips (for garnish)
  • Whipped cream (optional, for topping)

Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. Combine the crushed chocolate cookies with melted butter. Press into the bottom of the pan and bake for 10 minutes.
  3. Beat cream cheese and sugar until smooth, then mix in vanilla. Add eggs one at a time, mixing gently.
  4. Fold in chocolate chips.
  5. Layer half the cheesecake batter on the crust, drizzle with caramel, then add remaining batter.
  6. Bake for 50-60 minutes until edges are set. Let cool in pan.
  7. Drizzle with caramel and sprinkle sea salt. Chill in the refrigerator for at least 4 hours.
