- 1 ½ cups crushed chocolate sandwich cookies (like Oreos)
- ¼ cup melted butter
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup semi-sweet chocolate chips
- ½ cup caramel sauce (plus extra for drizzle)
- 1 teaspoon sea salt flakes
- Extra chocolate chips (for garnish)
- Whipped cream (optional, for topping)
Instructions
- Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
- Combine the crushed chocolate cookies with melted butter. Press into the bottom of the pan and bake for 10 minutes.
- Beat cream cheese and sugar until smooth, then mix in vanilla. Add eggs one at a time, mixing gently.
- Fold in chocolate chips.
- Layer half the cheesecake batter on the crust, drizzle with caramel, then add remaining batter.
- Bake for 50-60 minutes until edges are set. Let cool in pan.
- Drizzle with caramel and sprinkle sea salt. Chill in the refrigerator for at least 4 hours.
- Slice and serve, enjoying the reactions from your guests!
