Description

Triple Chocolate Lava Muffins with a gooey center of molten chocolate.


Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 3/4 cup whole milk
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chunks
  • 1/2 cup milk chocolate chunks
  • 1/2 cup white chocolate chunks
  • 1/2 cup ganache filling (made with equal parts cream and dark chocolate)

Instructions

  1. Preheat your oven to 375°F. Line a 12-cup muffin tin with paper liners.
  2. Whisk together flour, cocoa powder, baking powder, salt, granulated sugar, and brown sugar in a bowl.
  3. Whisk the eggs, whole milk, vegetable oil, and vanilla extract in another bowl until smooth.
  4. Stir wet ingredients into dry until just mixed. Fill muffin liners halfway, add ganache or chocolate square, then cover with more batter until 3/4 full.
  5. Sprinkle chocolate chunks on top. Bake for 15-18 minutes.
  6. Let cool for 5 minutes before serving warm.

Notes

Ensure ganache is spoonable. Avoid over-baking.
