A simple yet indulgent treat, these cookies feature luscious dulce de leche encased in buttery shortbread.

- 1 cup (225g) unsalted butter, softened
- 1/2 cup (60g) powdered sugar
- 1 1/2 cups (180g) all-purpose flour
- 1/4 cup (60g) dulce de leche
Instructions
- Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper. In a large bowl, blend the softened butter and powdered sugar until smooth and fluffy.
- Gradually add in your all-purpose flour to the butter and sugar mixture, mixing gently to form a soft dough.
- Roll dough into small 1-inch balls and place them on the prepared baking sheet. Press gently to create an indentation in each cookie center and fill with dulce de leche.
- Bake for 15-18 minutes until edges are lightly golden. Cool on the sheet for 5 minutes before transferring to a wire rack.
Notes
Chill the dough balls for 10 minutes before baking to prevent spreading.
