- Prepare the Filling: Start by taking a mixing bowl and adding the softened cream cheese. Using an electric mixer or a whisk, blend the cream cheese until it becomes smooth and creamy. Gradually incorporate the powdered sugar and vanilla extract into the bowl. Continue to mix until the entire mixture is well combined and fluffy in texture. You want a creamy filling that is not too runny, so avoid over-mixing.
- Assemble the Egg Rolls: Lay out your egg roll wrappers on a clean surface, making sure to keep them flat and separated. Place approximately a tablespoon of the cream cheese mixture onto the center of each wrapper. Next, add a spoonful of cherry pie filling on top. Be careful not to overfill them, as this might make it difficult to seal the edges. Once filled, fold the bottom edge over the filling, then fold the sides inwards, and roll it up tightly towards the top edge, sealing the roll completely. Use a little water on your fingers to moisten the edges to ensure they stick together well.
- Air Fry: Preheat your air fryer to 350°F (175°C). While it’s heating up, lightly spray the assembled egg rolls with cooking spray. This will help them achieve a golden brown color while cooking. Place the egg rolls in a single layer in the air fryer basket, making sure not to overcrowd them. Air fry for approximately 8 to 10 minutes, turning them halfway through the cooking time to ensure even crispiness. You’re looking for the egg rolls to become a beautiful golden brown color and crispy on the outside.
- Serve: Once cooked, remove the egg rolls from the air fryer and let them cool for a minute. Serve them warm, optionally dusted with powdered sugar or alongside a scoop of ice cream for an extra special treat. Enjoy this crispy, creamy, and fruity dessert!
