- 1 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 1/2 cup unsalted butter, melted
- 2/3 cup granulated sugar
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 3/4 cup Greek yogurt
- 1 1/2 cups chopped apples (Honeycrisp or Fuji recommended)
- 2 tablespoons brown sugar (for topping)
- 1/2 teaspoon ground cinnamon (for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- Peel and finely chop your apples, then set them aside.
- In a medium bowl, mix all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.
- In a large bowl, mix melted butter, sugar, eggs, vanilla extract, and Greek yogurt until smooth.
- Slowly add dry ingredients to wet ingredients, folding in chopped apples as you mix.
- Fill muffin liners 3/4 full with the batter.
- Bake in preheated oven for 18–22 minutes.
- Cool on a wire rack before serving.
Notes
Ensure that your yogurt and eggs are at room temperature for best results.
