Ingredients

  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 3/4 cup Greek yogurt
  • 1 1/2 cups chopped apples (Honeycrisp or Fuji recommended)
  • 2 tablespoons brown sugar (for topping)
  • 1/2 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and finely chop your apples, then set them aside.
  3. In a medium bowl, mix all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.
  4. In a large bowl, mix melted butter, sugar, eggs, vanilla extract, and Greek yogurt until smooth.
  5. Slowly add dry ingredients to wet ingredients, folding in chopped apples as you mix.
  6. Fill muffin liners 3/4 full with the batter.
  7. Bake in preheated oven for 18–22 minutes.
  8. Cool on a wire rack before serving.

Ensure that your yogurt and eggs are at room temperature for best results.
