- Start by preparing your apples. Peel, core, and slice them into thin pieces. This will ensure they cook quickly and offer the right texture when rolled into the tortillas. The thinner the slices, the better they will blend with the other flavors.
- In a skillet over medium heat, melt 2 tablespoons of butter. Once the butter is sizzling, add the sliced apples to the pan. Sprinkle them with brown sugar, ground cinnamon, and a pinch of salt. - With the apples nearly cooked, stir in the vanilla extract and cornstarch. The cornstarch will help thicken the mixture, preventing leaks when wrapped. Cook for an additional 2 minutes, during which the filling will become deep, aromatic, and perfectly delicious.
- Take your tortillas and lay them flat. Spoon the apple filling down the center of each tortilla, making sure to leave some space on either end. To wrap, fold the bottom edge of the tortilla upwards, tuck in the sides, and roll tightly to enclose the apple filling. This ensures no apple escapes while cooking!
