Ingredients

  • 6 cups fresh apricots, pitted and sliced
  • 3/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup whole milk (or buttermilk)
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon coarse sugar (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease the baking dish.
  2. Prepare apricots by slicing and mixing with sugar, cornstarch, and flavorings.
  3. Pour apricot mixture into the baking dish.
  4. Make the biscuit topping by mixing dry ingredients and cutting in butter.
  5. Add wet ingredients to the dry mixture, mixing gently.
  6. Drop spoonfuls of topping over the apricot layer and sprinkle with coarse sugar if desired.
  7. Bake for 35-45 minutes until golden brown and bubbly.
  8. Cool for 15-20 minutes before serving.

Notes

Always use cold unsalted butter for the biscuit topping.
