  • 2 teaspoons Dijon mustard
  • 1/2 cup of Asiago cheese, grated

Instructions

  1. Begin by washing and peeling your yellow onions. Slice them into uniform rounds, anywhere between 1/4 inch to 1/2 inch thick. This ensures that they roast evenly and develop that delicious sweetness. Once sliced, lay the onion rounds in a greased baking dish, spreading them out into a single layer. Drizzle with a good amount of olive oil to help caramelize the onions and sprinkle with chopped thyme, salt, and pepper. This step is crucial as it will build the flavor profile right from the start. Pop the baking dish into your preheated oven for 20 minutes to initiate the roasting process.
  2. While the onions roast, take a small saucepan and pour in the heavy cream over medium heat. Keep stirring it frequently to prevent it from sticking or simmering too vigorously. As the cream heats up, add in the Dijon mustard and half of your grated Asiago cheese. Stir until the cheese is completely melted and you achieve a luscious, creamy consistency.
