Ingredients

  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 50 grams granulated sugar
  • 50 grams brown sugar, packed
  • 120 milliliters milk
  • 60 grams unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 200 grams fresh blueberries
  • 1 tablespoon powdered sugar, for dusting

Instructions

  1. Preheat your oven to 190°C (375°F). Grease the mini muffin tin.
  2. In a large mixing bowl, whisk together the flour, baking powder, salt, cinnamon, granulated sugar, and brown sugar.
  3. In a separate bowl, mix the milk, melted butter, egg, vanilla extract, and lemon juice.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Gently fold in the blueberries.
  6. Fill each muffin cavity two-thirds full with batter and bake for 15-18 minutes.
  7. Cool slightly before transferring to a rack and dust with powdered sugar before serving.
