- 1 small spaghetti squash
- 2 tbsp butter
- 2 cloves garlic, finely minced
- 1/4 cup finely minced parsley
- 1/2 tsp salt
- 1/4 cup shredded parmesan cheese
Instructions
- Start by preheating your oven to 375°F (190°C). Make sure to use a sharp knife to pierce the spaghetti squash a few times, as this will allow steam to escape while baking.
- Place the pierced spaghetti squash on a baking sheet and place it in the preheated oven. Bake for about 60 minutes or until the squash feels tender to the touch.
- Using a sharp knife, carefully slice the squash lengthwise and scoop out the seeds. Take a fork and gently scrape the flesh to release the spaghetti-like strands.
- In a large pan on medium-low heat, melt the butter. Add the finely minced garlic and cook until fragrant and slightly golden.
- Once the garlic is ready, stir in the minced parsley, salt, and the scraped squash strands into the pan. Toss everything together.
- Finally, add the shredded parmesan cheese to the skillet and stir continuously until it melts.
Notes
Ensure the squash is completely tender before scraping, as undercooked squash will not yield proper strands.
