- 1/4 cup brown sugar, packed
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 medium ripe banana, mashed (about 1/2 cup)
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Begin by preheating your oven to 350°F (175°C). As the oven warms, prepare your baking sheets by lining them with parchment paper.
- In a large mixing bowl, combine the softened unsalted butter, granulated sugar, and brown sugar. Beat until light and fluffy, then add the egg, vanilla extract, and the mashed banana, mixing until well blended.
- In a separate bowl, whisk together all-purpose flour, baking soda, baking powder, salt, and ground cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing gently. If using nuts, fold them in gently.
- Using a tablespoon or cookie scoop, drop rounded tablespoons of dough onto your prepared baking sheets, leaving space in between.
- Bake for 10-12 minutes until the edges are lightly golden and the centers have set. Let cool on the baking sheets for 5 minutes before transferring to a wire rack.

Cookies can be frozen. For gluten-free, use a 1:1 gluten-free flour blend.
