Instructions
- Preheat your oven to 350°F (175°C).
- Line your 12-cup muffin pan with paper liners.
- In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.
- In a large bowl, use a hand mixer or stand mixer to beat the softened butter with both the granulated and brown sugar until fluffy.
- Add the eggs, mashed bananas, and vanilla extract to the creamed mixture, mixing until fully combined.
- Gradually mix in the dry ingredients until just combined.
- Divide the batter evenly among the cupcake liners, filling each about ¾ full.
- Bake for 18–22 minutes, or until a toothpick comes out clean.
- Allow the cupcakes to cool in the pan for about 5 minutes before transferring them to a wire rack.
- As the cupcakes cool, prepare the cream cheese frosting by beating together the softened cream cheese, powdered sugar, heavy cream, and vanilla extract.
- Spread or pipe the chilled frosting onto the cooled cupcakes and garnish with banana chips.
Notes
Ensure you use very ripe bananas for maximum flavor and sweetness; the darker the bananas, the better. Store frosted cupcakes in the refrigerator to keep the cream cheese from spoiling.
