- 2 cups cooked shredded chicken
- 1/2 cup barbecue sauce
- 2 cups shredded cheddar cheese
- 4 large flour tortillas
- 1/4 cup chopped green onions (optional)
- 2 tablespoons olive oil
Instructions
- Begin by combining the shredded chicken with the barbecue sauce in a medium-sized bowl. Mix them thoroughly until the chicken is generously coated with the sauce.
- Heat 1 tablespoon of olive oil in your skillet over medium heat. Place one flour tortilla into the skillet and sprinkle half a cup of shredded cheese, followed by half a cup of BBQ chicken mixture. Add another half cup of cheese on top and cover with another tortilla.
- Cook for about 3 to 4 minutes on each side until golden brown and cheese is melted.
- Remove from skillet, slice into wedges, and garnish with green onions if desired.
