  • 1/2 cup peas
  • 3 cups cooked rice (preferably cold)
  • 2 eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • Salt and pepper, to taste
  • 2 green onions, sliced (for garnish)

Instructions

  1. Begin by heating 1 tablespoon of vegetable oil in your skillet or wok over medium-high heat. Add the thinly sliced beef, spreading it out in a single layer. Allow the beef to sear undisturbed for about 2-3 minutes or until fully browned. This caramelizes the beef, adding depth to the flavor. Once done, remove the beef from the pan and set it aside temporarily on a plate.
  2. Using the same skillet, pour in the remaining tablespoon of vegetable oil. Add the minced garlic and diced onion, allowing these to cook for around 1-2 minutes until they release their fragrances. This forms a delightful base for your stir-fry, enhancing the dish’s complexity.
  3. Next, introduce the julienned carrot and peas to the pan. Stir-fry these over medium-high heat for about 3-4 minutes or until they’re tender but still vibrant. This quick cooking method helps the vegetables maintain their natural sweetness and crispness.
  4. Push the vegetables to one side of the skillet, leaving space to pour in the lightly beaten eggs. Allow them to set slightly before scrambling them until fully cooked. Integrate these golden strands into the vegetable mix for added texture and flavor.
  5. Add the cold, cooked rice into the pan. Use a spatula to break apart any clumps, ensuring each grain gets a chance to fry. Cold rice works best in fried rice recipes as it prevents the dish from becoming mushy.
