- 2 teaspoons baking powder

- 2/3 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- Oil for frying
- 1 cup powdered sugar
- 2 to 3 tablespoons milk or cream
- 1/2 teaspoon vanilla extract
Instructions
- Start by peeling, coring, and dicing the apples into small, equal-sized pieces.
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon.
- In a separate bowl, beat together the eggs, milk, and vanilla extract until well combined.
- Gently combine the wet and dry ingredients, then fold in the diced apples.
- In a deep pan, heat about two inches of oil over medium heat.
- Using a spoon or small ice cream scoop, carefully drop spoonfuls of the batter into the hot oil, frying two to three fritters at a time.
- Once fried, use a slotted spoon to remove the fritters and place them on paper towels to drain excess oil. Whisk together powdered sugar, milk or cream, and additional vanilla extract to form a glaze.
