Description

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2/3 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Oil for frying
  • 1 cup powdered sugar
  • 2 to 3 tablespoons milk or cream
  • 1/2 teaspoon vanilla extract

Instructions

  1. Start by peeling, coring, and dicing the apples into small, equal-sized pieces.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon.
  3. In a separate bowl, beat together the eggs, milk, and vanilla extract until well combined.
  4. Gently combine the wet and dry ingredients, then fold in the diced apples.
  5. In a deep pan, heat about two inches of oil over medium heat.
  6. Using a spoon or small ice cream scoop, carefully drop spoonfuls of the batter into the hot oil, frying two to three fritters at a time.
  7. Once fried, use a slotted spoon to remove the fritters and place them on paper towels to drain excess oil. Whisk together powdered sugar, milk or cream, and additional vanilla extract to form a glaze.
