- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup butter, melted
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 cups fresh or frozen blackberries
Instructions
- Preheat your oven to 375°F (190°C) and prepare a muffin tin with paper liners.
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix melted butter, eggs, milk, and vanilla.
- Add the wet ingredients to the dry ingredients, mixing gently.
- Fold in the blackberries.
- Prepare the oatmeal streusel topping and sprinkle over the batter in muffin cups.
- Bake for 20 to 25 minutes until a toothpick comes out clean.
- Cool in the tin for 5 minutes before transferring to a wire rack.
Notes
For best flavor, use ripe blackberries or frozen berries if necessary.
