Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups fresh or frozen blackberries

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with paper liners.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix melted butter, eggs, milk, and vanilla.
  4. Add the wet ingredients to the dry ingredients, mixing gently.
  5. Fold in the blackberries.
  6. Prepare the oatmeal streusel topping and sprinkle over the batter in muffin cups.
  7. Bake for 20 to 25 minutes until a toothpick comes out clean.
  8. Cool in the tin for 5 minutes before transferring to a wire rack.

Notes

For best flavor, use ripe blackberries or frozen berries if necessary.
