This Blueberry Thyme Chicken is a delightful combination of sweet and savory flavors with fresh blueberries and thyme.

- 4 boneless, skinless chicken breasts (about 6 oz each)
- 1 cup fresh blueberries
- 1 Tbsp honey
- 2 tsp fresh thyme (or 1 tsp dried)
- 2 Tbsp balsamic vinegar
- 1 Tbsp olive oil
- Salt and black pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts generously with salt and black pepper on both sides.
- In a medium-sized saucepan, combine the blueberries, balsamic vinegar, honey, and thyme. Cook over medium heat until it thickens slightly.
- Heat olive oil in an oven-safe skillet and sear the chicken breasts for 2–3 minutes on each side.
- Pour the blueberry sauce over the seared chicken and bake for 20 to 25 minutes, until the chicken reaches an internal temperature of 165°F (74°C).
- Let the chicken rest for 3 minutes before serving.
Notes
If using frozen blueberries, thaw and drain excess liquid before cooking.
