Description

This Blueberry Thyme Chicken is a delightful combination of sweet and savory flavors with fresh blueberries and thyme.


Ingredients

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 1 cup fresh blueberries
  • 1 Tbsp honey
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp olive oil
  • Salt and black pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts generously with salt and black pepper on both sides.
  3. In a medium-sized saucepan, combine the blueberries, balsamic vinegar, honey, and thyme. Cook over medium heat until it thickens slightly.
  4. Heat olive oil in an oven-safe skillet and sear the chicken breasts for 2–3 minutes on each side.
  5. Pour the blueberry sauce over the seared chicken and bake for 20 to 25 minutes, until the chicken reaches an internal temperature of 165°F (74°C).
  6. Let the chicken rest for 3 minutes before serving.

Notes

If using frozen blueberries, thaw and drain excess liquid before cooking.
