- Start by preheating your oven to 325°F (165°C). While the oven warms up, take your beef chuck roast and pat it dry with paper towels. Generously season it with salt and pepper on all sides; this critical step ensures a flavorful crust once the beef is seared.
- Heat the olive oil in a large, oven-safe pot over medium-high heat. Once the olive oil shimmers in the pan, carefully add the seasoned beef and sear it until it’s beautifully golden brown on all sides. This typically takes about 3-4 minutes per side.
- In the same pot where you seared the beef, add your chopped onion and minced garlic. Sauté these for about 2-3 minutes. You want the onion to become soft and translucent and the garlic to become fragrant.
- Return the beautifully seared beef to the pot, along with any juices that may have collected on the plate. Next, pour in the beef broth, ensuring the liquid mostly submerges the beef. Cover the pot with a lid and place it in the preheated oven. Allow the beef to braise for 2.5 to 3 hours, or until it becomes fork-tender.
- With approximately 45 minutes left on the cooking timer, carefully add the halved Yukon Gold potatoes to the pot. Gently stir to ensure they are well-coated in the flavorful braising liquid.
- Once your beef is tender, remove the pot from the oven. Transfer the beef and potatoes to a serving platter. Strain the remaining braising liquid to remove the onions and garlic, then return it to the pot.
