  • 1 cup brown sugar
  • 0.5 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 20 soft caramels
  • 0.25 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)
  • Optional: flaky sea salt, for topping

Instructions

  1. In a large mixing bowl, start by creaming together the softened unsalted butter, brown sugar, and granulated sugar.
  2. Next, crack in one large egg and add 2 teaspoons of vanilla extract to the butter-sugar mixture.
  3. In a separate bowl, you’ll need to whisk together the dry ingredients: 2.5 cups of all-purpose flour, 1 teaspoon of baking soda, 0.5 teaspoon of salt, and 2 teaspoons of ground cinnamon.
  4. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  5. Once your dough is mixed, cover the bowl with plastic wrap and place it in the refrigerator for at least 30 minutes.
  6. After the dough has chilled, scoop approximately 1.5 tablespoons of dough and flatten it slightly in your palm, placing one soft caramel in the center.
  7. In a small bowl, combine 0.25 cup of granulated sugar and 1 tablespoon of ground cinnamon, then roll each dough ball in this mixture.
  8. Place the coated dough balls onto the prepared baking sheet and bake at 350°F (175°C) for 9 to 11 minutes.
  9. Once baked, let the cookies cool on the baking sheet for approximately 5 minutes before transferring them to a wire rack.

Notes

Allow cookies to cool completely before storing them. Store in an airtight container.
