- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 0.5 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2.5 cups all-purpose flour
- 1 teaspoon baking soda
- 0.5 teaspoon salt
- 2 teaspoons ground cinnamon
- 20 soft caramels
- 0.25 cup granulated sugar (for coating)
- 1 tablespoon ground cinnamon (for coating)
- Optional: flaky sea salt, for topping
Instructions
- In a large mixing bowl, start by creaming together the softened unsalted butter, brown sugar, and granulated sugar.
- Next, crack in one large egg and add 2 teaspoons of vanilla extract to the butter-sugar mixture.
- In a separate bowl, you’ll need to whisk together the dry ingredients: 2.5 cups of all-purpose flour, 1 teaspoon of baking soda, 0.5 teaspoon of salt, and 2 teaspoons of ground cinnamon.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined.
- Once your dough is mixed, cover the bowl with plastic wrap and place it in the refrigerator for at least 30 minutes.
- After the dough has chilled, scoop approximately 1.5 tablespoons of dough and flatten it slightly in your palm, placing one soft caramel in the center.
- In a small bowl, combine 0.25 cup of granulated sugar and 1 tablespoon of ground cinnamon, then roll each dough ball in this mixture.
- Place the coated dough balls onto the prepared baking sheet and bake at 350°F (175°C) for 9 to 11 minutes.
- Once baked, let the cookies cool on the baking sheet for approximately 5 minutes before transferring them to a wire rack.
Notes
Allow cookies to cool completely before storing them. Store in an airtight container.
