Description
A flavorful and nutritious Cajun Chicken Bowl with seasoned chicken, rice, and fresh vegetables.
Ingredients
Scale
- 1.1 lb boneless, skinless chicken breasts or thighs
- 1.5 tablespoons Cajun seasoning
- 1 tablespoon olive oil (for chicken)
- 0.5 teaspoon salt (for chicken)
- 0.25 teaspoon black pepper (for chicken)
- 1 cup long-grain white rice
- 2 cups water (for cooking rice)
- 0.5 teaspoon salt (for rice)
- 1 tablespoon olive oil (for sautéing vegetables)
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small red onion, diced
- 1 cup sweet corn kernels, fresh or frozen
- 1 can black beans, drained and rinsed
- 1 avocado, sliced
- Fresh cilantro, chopped
- Lime wedges (for serving)
Instructions
- Begin by rinsing the long-grain white rice in cold water to remove excess starch, ensuring fluffy grains. Combine the rice with water and a pinch of salt in a saucepan. Bring to a boil, lower heat, cover, and cook for about 15 minutes until water is absorbed.
- In a medium bowl, coat the chicken with Cajun seasoning, salt, and black pepper. Heat olive oil in a skillet, add chicken, and cook about 5-7 minutes on each side. Transfer to a plate and let rest before slicing.
- In the same skillet, add olive oil and sauté bell peppers and onion for 4-5 minutes. Add corn and beans, and cook for another 2 minutes.
- Assemble bowls with rice, sautéed vegetables, sliced chicken, avocado, and cilantro. Serve with lime wedges.
