Ingredients

  • 4 large Portobello mushroom caps, stems and gills removed
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella, cubed or sliced
  • 1/4 cup fresh basil leaves, chopped
  • 2 tbsp balsamic glaze (store-bought or homemade)
  • 2 cloves garlic, minced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the mushroom caps on a lined baking sheet. Brush each cap with a generous amount of olive oil on both sides, and season with salt and pepper.
  3. In a separate bowl, combine cherry tomatoes, mozzarella, basil, and garlic. Mix well.
  4. Evenly distribute the mixture among the mushroom caps.
  5. Bake for 15–18 minutes until the mushrooms are tender and cheese is bubbly.
  6. Drizzle with balsamic glaze and garnish with basil leaves.

Notes

Make sure the gills of the mushrooms are removed to prevent excess moisture.
