These Caramel Ritz Cracker Christmas Cookies are a fabulous mix of crunchy Ritz crackers, a gooey caramel center, and a smooth white chocolate coating.

- 24 Ritz crackers
- 1/2 cup caramel sauce (or melted caramel candies)
- 1 cup white chocolate chips (or white candy melts)
- 1 tablespoon vegetable oil
- Red, white, and green festive sprinkles
Instructions
- Prepare the Baking Sheet: Line your baking sheet with parchment paper.
- Make the Caramel-Filled Sandwiches: On half of the crackers, place a generous dollop of caramel sauce, press another cracker over the top.
- Melt the White Chocolate: Combine white chocolate chips and vegetable oil, heat until smooth.
- Coat the Cookies in White Chocolate: Dip sandwiches in melted chocolate, shake off excess.
- Decorate with Sprinkles: While chocolate is wet, add festive sprinkles.
- Let the Cookies Set: Allow chocolate to harden at room temperature or refrigerate briefly.
