Description

Caramelised Vietnamese Shredded Beef is a dish that expertly balances savory, sweet, and umami tastes, showcasing tender beef caramelized with a blend of flavors.

Ingredients

Scale
  • 500g (1 lb) beef (e.g., flank steak or brisket), thinly sliced
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 onion, finely chopped
  • 2 tablespoons brown sugar
  • 3 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional for spice)
  • Fresh cilantro for garnish
  • Steamed rice for serving

Instructions

  1. Begin by placing your thinly sliced beef into a large bowl. Add 1 tablespoon of soy sauce along with the freshly ground black pepper and sesame oil. Gently toss the beef to ensure each piece is evenly coated. Allow the beef to marinate for about 15 minutes.
  2. In a large pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once the oil is hot, add the minced garlic and finely chopped onion, sautéing for around 2-3 minutes until they are fragrant and starting to soften.
  3. Add the marinated beef into the pan, ensuring it is spread out evenly. Stir-fry the beef for about 5-7 minutes until it is nicely browned on all sides.
  4. Once your beef is browned, sprinkle the brown sugar evenly over the meat. Stir this in thoroughly, allowing it to melt and caramelize for about 2-3 minutes.
  5. Now it’s time to incorporate the fish sauce, remaining soy sauce, and oyster sauce into the pan. Stir everything together and allow it to cook for an additional 2 minutes.

Notes

For the best flavor, choose high-quality cuts of beef that are marbled well. Ensure your pan is hot enough before adding the beef for better caramelization. If the sauce becomes too thick, add a splash of water to loosen it up while still keeping it flavorful.
