Description

Delicious Caramelized Butternut Squash with Gorgonzola and a sweet and tangy cranberry-balsamic glaze.

Ingredients

Scale
  • 1 medium butternut squash (about 900 g), cubed
  • 2 tbsp olive oil
  • 1 tbsp maple syrup or honey
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 cup dried cranberries
  • 1/4 cup balsamic vinegar
  • 100 g Gorgonzola, crumbled
  • 2 tbsp toasted walnuts (optional)

Instructions

  1. Begin by preheating your oven to 400°F (200°C). This critical step ensures your squash will roast to perfection, achieving a delightful caramelization. Line a baking tray with parchment paper to facilitate easy clean-up and enhance the roasting experience.
  2. In a large mixing bowl, toss the cubed butternut squash with 2 tablespoons of olive oil, 1 tablespoon of maple syrup or honey, 1/2 teaspoon of sea salt, and 1/4 teaspoon of black pepper. Here, you want to coat the squash evenly, allowing the oil and seasonings to flavor each piece. This coating not only adds taste but also helps with the caramelization process as it roasts.
  3. Once the squash is well-coated, spread it out evenly on the prepared baking tray. This step is crucial; overcrowding will lead to steaming rather than roasting. Place the tray in the oven and roast for about 25–30 minutes. Be sure to flip the squash halfway through to ensure even browning and caramelization. You’ll know it’s ready when it turns golden and tender.
  4. While the squash is roasting, prepare the cranberry-balsamic glaze. In a saucepan, combine the balsamic vinegar and dried cranberries. Simmer this mixture over medium heat for 5–7 minutes, allowing it to thicken slightly. This glaze will become a flavorful topping, perfectly balancing the sweetness of the squash.
  5. Once the butternut squash is perfectly caramelized, remove it from the oven and transfer it to a serving plate. Drizzle the thickened cranberry-balsamic glaze generously over the top. Finish off the dish by adding the crumbled Gorgonzola cheese and toasted walnuts, if using, for extra flavor and texture. Serve this warm, allowing your guests to enjoy its rich blend of flavors!

Notes

Ensure to choose a ripe butternut squash; it should feel heavy for its size and have a smooth, firm skin.
