Ingredients

  • 3 large onions, thinly sliced
  • 1 tablespoon lemon juice
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable broth or water
  • ½ teaspoon black pepper (or to taste)
  • 2 carrots, diced
  • 1.5 cups red lentils, rinsed and drained
  • 1 teaspoon salt (or to taste)
  • 3 garlic cloves, minced
  • Fresh parsley or cilantro, for garnish (optional)

Instructions

  1. Heat the oil in a large pot over medium heat.
  2. Add the sliced onions and salt; stir occasionally for 15–20 minutes until caramelized.
  3. Stir in garlic, cumin, and paprika; cook for 1–2 minutes.
  4. Add carrots and cook for another 5 minutes.
  5. Pour in lentils, vegetable broth, and diced tomatoes; bring to a boil.
  6. Reduce heat, cover, and simmer for about 20 minutes until lentils are soft.
  7. Stir in lemon juice, salt, and pepper to taste before serving.

Notes

For a creamier texture, consider adding a splash of coconut milk or a dollop of yogurt before serving.
