- 1 tablespoon lemon juice
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 2 tablespoons olive oil
- 1 can (14.5 oz) diced tomatoes
- 6 cups vegetable broth or water
- ½ teaspoon black pepper (or to taste)
- 2 carrots, diced
- 1.5 cups red lentils, rinsed and drained
- 1 teaspoon salt (or to taste)
- 3 garlic cloves, minced
- Fresh parsley or cilantro, for garnish (optional)
Instructions
- Heat the oil in a large pot over medium heat.
- Add the sliced onions and salt; stir occasionally for 15–20 minutes until caramelized.
- Stir in garlic, cumin, and paprika; cook for 1–2 minutes.
- Add carrots and cook for another 5 minutes.
- Pour in lentils, vegetable broth, and diced tomatoes; bring to a boil.
- Reduce heat, cover, and simmer for about 20 minutes until lentils are soft.
- Stir in lemon juice, salt, and pepper to taste before serving.
Notes
For a creamier texture, consider adding a splash of coconut milk or a dollop of yogurt before serving.
