- 1 cup grated zucchini (squeezed dry)
- 1 cup grated carrot
- 1 cup grated apple (peeled and cored)
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup applesauce (unsweetened)
- 2/3 cup brown sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 cup whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare your loaf pan by greasing it or lining it with parchment paper. Measure out and grate one cup each of zucchini, carrot, and peeled apple. Make sure you squeeze the zucchini well to remove excess moisture, as this will ensure your bread doesn’t come out soggy.
- In a large mixing bowl, whisk together the eggs, vegetable oil, applesauce, brown sugar, and vanilla extract. Once well-blended, gently stir in the prepared zucchini, carrot, and apple.
- In another bowl, combine the all-purpose and whole wheat flour with baking soda, baking powder, salt, cinnamon, nutmeg, and ginger. Whisk these dry ingredients to ensure that the leavening agents are mixed thoroughly through the flour.
- Gradually add the mixed dry ingredients into the bowl with the wet mixture, stirring just until everything is combined. Be careful not to over-mix. If you’re using nuts, gently fold them in at this stage.
- Pour your prepared batter into the greased or lined loaf pan, smoothing out the top for an even bake. Place the pan in the preheated oven and bake for 55 to 65 minutes. You’ll know the bread is ready when a toothpick inserted in the center comes out clean.
- Remove the bread from the oven and let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. Enjoy warm or at room temperature!
