Instructions

  1. Start by preheating your oven according to the package instructions for the tater tots. Spread the frozen tater tots evenly on a baking sheet and bake them until they become golden brown and crispy, which usually takes about 20-25 minutes.
  2. While the tater tots are baking, grab a large skillet and heat it over medium heat. Add your ground beef (or turkey/plant-based alternative) to the skillet. Season it well with salt and pepper to enhance the flavor as it cooks. Brown the meat thoroughly, breaking it apart with a spatula as it cooks.
  3. In a large mixing bowl, combine the cooked beef, the crispy tater tots (crushing them slightly for better texture), shredded cheddar cheese, and Monterey Jack cheese. This mixture should be fragrant and inviting!
  4. Warm the tortillas until they are soft and pliable—this will help with rolling the burritos without cracking. Take a tortilla and spoon some of the filling mixture in the center. Add a drizzle of chipotle sauce and a dollop of sour cream for extra flavor.
