Ingredients

  • 1 lb ground beef
  • 4 cups diced potatoes
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
  • 1/2 cup diced onions
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, heat olive oil and sauté diced onions until translucent.
  3. Add ground beef, cooking until browned and draining excess fat.
  4. Stir in taco seasoning and diced tomatoes, cooking for 5 minutes.
  5. Toss diced potatoes in a bowl with olive oil, salt, and pepper, then spread in a baking dish.
  6. Bake potatoes for 20 minutes in the oven.
  7. Remove and spoon beef mixture over potatoes, adding cheese on top, then bake for an additional 15 minutes.
  8. Let cool slightly, then serve with sour cream and cilantro.

Notes

This dish is best served immediately but stores well in an airtight container in the refrigerator for up to three days.
