- 2 medium zucchinis, grated
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 large eggs, beaten
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Start by preheating your oven to 425°F (220°C). Take the two medium zucchinis, rinse them, and proceed to grate them using a box grater or a food processor. Once grated, place the zucchini in a clean kitchen towel. Twist and squeeze to remove as much moisture as possible.
- In a large mixing bowl, combine the squeezed zucchini with 1 cup of shredded mozzarella cheese, grated Parmesan cheese, and the two beaten eggs. Follow by adding 1 cup of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of garlic powder, 1 teaspoon of dried oregano, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Mix thoroughly until all ingredients are well blended.
- Transfer the mixture onto your prepared baking sheet, spreading it out evenly to form a rectangular shape. Bake the breadsticks in the preheated oven for 15-20 minutes or until the top turns golden brown and the edges become crispy.
- Once your initial baking time is complete, remove the breadsticks from the oven. Quickly sprinkle the remaining 1 cup of mozzarella cheese evenly over the top of the breadsticks. Return them to the oven and bake for an additional 5-7 minutes, until the cheese is melted and bubbling.
- Once baked, allow the breadsticks to cool slightly on the baking sheet. Use a sharp knife or a pizza cutter to slice them into breadstick shapes.
Notes
Ensure to squeeze out as much moisture from the zucchini as possible to prevent sogginess.
