Ingredients

  • 2 medium zucchinis, grated
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs, beaten
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Start by preheating your oven to 425°F (220°C). Take the two medium zucchinis, rinse them, and proceed to grate them using a box grater or a food processor. Once grated, place the zucchini in a clean kitchen towel. Twist and squeeze to remove as much moisture as possible.
  2. In a large mixing bowl, combine the squeezed zucchini with 1 cup of shredded mozzarella cheese, grated Parmesan cheese, and the two beaten eggs. Follow by adding 1 cup of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of garlic powder, 1 teaspoon of dried oregano, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Mix thoroughly until all ingredients are well blended.
  3. Transfer the mixture onto your prepared baking sheet, spreading it out evenly to form a rectangular shape. Bake the breadsticks in the preheated oven for 15-20 minutes or until the top turns golden brown and the edges become crispy.
  4. Once your initial baking time is complete, remove the breadsticks from the oven. Quickly sprinkle the remaining 1 cup of mozzarella cheese evenly over the top of the breadsticks. Return them to the oven and bake for an additional 5-7 minutes, until the cheese is melted and bubbling.
  5. Once baked, allow the breadsticks to cool slightly on the baking sheet. Use a sharp knife or a pizza cutter to slice them into breadstick shapes.

Notes

Ensure to squeeze out as much moisture from the zucchini as possible to prevent sogginess.
