This Cherry Amaretto Tiramisu is a delightful take on the classic dessert, featuring layers of coffee-soaked ladyfingers, fluffy mascarpone filling, and fresh cherries.


Ingredients

  • 1 pound fresh cherries, pitted and halved
  • ¼ cup Amaretto liqueur
  • 1 tablespoon sugar
  • 16 ladyfingers
  • 8 oz mascarpone cheese
  • 1 cup heavy cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup brewed espresso, cooled
  • Cocoa powder, for dusting
  • Shaved dark chocolate (optional)

Instructions

  1. Start by combining your pitted and halved cherries in a medium bowl along with the Amaretto liqueur and sugar. Mix gently to ensure the cherries are well coated, then let them sit for about 30 minutes.
  2. In another bowl, combine the mascarpone cheese, powdered sugar, and vanilla extract. Beat this mixture on medium speed until it’s smooth and creamy. In a separate bowl, whip the heavy cream until it forms stiff peaks. Gently fold the whipped cream into the mascarpone mixture.
  3. Dip each ladyfinger into the cooled espresso quickly and arrange half of the soaked ladyfingers in your dish. Spread half of the mascarpone filling over the ladyfingers, adding half of the cherry mixture on top. Repeat with the remaining ingredients.
  4. Dust the top generously with cocoa powder and refrigerate for at least 4 hours to set the tiramisu.
