Prepare the Crust:
Mix graham cracker crumbs with melted butter and press into a lined springform pan. Refrigerate for 15 minutes to set.

Beat cream cheese and sugar until smooth. Add lemon/lime zests, juices, and vanilla; mix well.

Whip heavy cream to soft peaks; fold into cream cheese mixture gently.
