- Begin by patting the chicken breasts dry with a paper towel, as this helps achieve a beautiful sear. Season them generously on both sides with salt and black pepper. Next, heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken breasts, searing them for about 6-7 minutes on each side until they are golden brown and cooked through. To ensure even cooking, refrain from moving the chicken around too much. Once done, transfer the cooked chicken to a plate and cover it loosely with foil to keep warm.
- In the same skillet where you cooked the chicken, reduce the heat to medium and add the unsalted butter. Once the butter has melted, add the sliced mushrooms. Stir occasionally, allowing them to sauté until they become golden and tender, approximately 5 minutes. Add the minced garlic and sauté for another minute until fragrant; be careful not to let it burn. Next, pour in the chicken broth, scraping the bottom of the skillet to lift all the flavorful bits stuck to the pan. Let this simmer for about 3 minutes before incorporating the heavy cream, stirring continuously.
- Once the sauce has embraced a creamy texture, sprinkle in the grated Parmesan cheese along with the fresh thyme leaves and stir until the cheese is melted and well incorporated. Allow the sauce to simmer and thicken slightly, about 3-5 minutes more. If it appears too thick, simply add a splash of chicken broth to loosen it. Return the seared chicken breasts to the skillet, spooning the decadent sauce over them. Let it all cook together for another minute or two, allowing the flavors to meld beautifully. Finally, if desired, garnish with chopped parsley before serving warm.
