Ingredients

- 4 chicken thighs (skin-on and bone-in)
- 2 large sweet potatoes, peeled and cubed
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon ground paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup chicken broth
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare your baking dish with a drizzle of olive oil.
- Season the chicken thighs with paprika, thyme, salt, and pepper.
- Assemble the dish by placing chicken, sweet potatoes, onions, and garlic in the baking dish.
- Add chicken broth around the ingredients.
- Cover with foil and bake for 45 minutes; uncover and bake for another 15 minutes until nicely golden.
- Garnish with parsley before serving.
Notes
For crisper chicken skin, remove foil last 10 minutes of cooking. Adjust garlic to taste.
