Description

A comforting and nutritious casserole with chicken thighs and sweet potatoes.


Ingredients

  • 4 chicken thighs (skin-on and bone-in)
  • 2 large sweet potatoes, peeled and cubed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare your baking dish with a drizzle of olive oil.
  3. Season the chicken thighs with paprika, thyme, salt, and pepper.
  4. Assemble the dish by placing chicken, sweet potatoes, onions, and garlic in the baking dish.
  5. Add chicken broth around the ingredients.
  6. Cover with foil and bake for 45 minutes; uncover and bake for another 15 minutes until nicely golden.
  7. Garnish with parsley before serving.

Notes

For crisper chicken skin, remove foil last 10 minutes of cooking. Adjust garlic to taste.
