Instructions

  1. Begin by tossing the cubed chicken with one tablespoon of olive oil, garlic powder, smoked paprika, onion powder, dried thyme, and a generous pinch of salt and pepper in a large bowl. Ensure every piece of chicken is well-coated in the seasoning. Let the mixture sit for about 5 to 10 minutes, allowing the flavors to meld as you prepare the sweet potatoes.
  2. In your preheated cast-iron skillet, add the remaining tablespoon of olive oil over medium heat. Once heated, add the diced sweet potatoes in a single layer. Season lightly with salt and pepper. Cook for 10 to 12 minutes, turning occasionally until tender and golden. Remove from the skillet and set aside.
  3. In the same skillet, add the marinated chicken cubes in a single layer. Sear for about 5 to 7 minutes, turning for even cooking until golden-brown. Use a meat thermometer to ensure the chicken has reached 165°F.
  4. Return the cooked sweet potatoes to the skillet with the chicken. Gently fold together, adding a tablespoon of butter if desired. Heat for an additional 2 to 3 minutes and garnish with fresh parsley or thyme before serving.
