- Begin by tossing the cubed chicken with one tablespoon of olive oil, garlic powder, smoked paprika, onion powder, dried thyme, and a generous pinch of salt and pepper in a large bowl. Ensure every piece of chicken is well-coated in the seasoning. Let the mixture sit for about 5 to 10 minutes, allowing the flavors to meld as you prepare the sweet potatoes.
- In your preheated cast-iron skillet, add the remaining tablespoon of olive oil over medium heat. Once heated, add the diced sweet potatoes in a single layer. Season lightly with salt and pepper. Cook for 10 to 12 minutes, turning occasionally until tender and golden. Remove from the skillet and set aside.
- In the same skillet, add the marinated chicken cubes in a single layer. Sear for about 5 to 7 minutes, turning for even cooking until golden-brown. Use a meat thermometer to ensure the chicken has reached 165°F.
- Return the cooked sweet potatoes to the skillet with the chicken. Gently fold together, adding a tablespoon of butter if desired. Heat for an additional 2 to 3 minutes and garnish with fresh parsley or thyme before serving.
