  • 1 (10.5 oz) can French onion soup
  • 1 ¾ cups low-sodium chicken broth
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • ½ cup French fried onions (optional, for topping)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Begin by setting your oven to 350°F (175°C). Grab your 9×13-inch casserole dish and grease it with a little cooking spray or butter.
  2. In a large mixing bowl, whisk together the cream of chicken soup, French onion soup, and chicken broth until the mixture is smooth and well-combined.
  3. Stir in the uncooked rice, garlic powder, black pepper, and the shredded rotisserie chicken. Ensure everything is well mixed.
  4. Pour the mixture into the greased casserole dish, cover with aluminum foil, and bake for 45 minutes.
  5. Remove the foil and sprinkle the shredded mozzarella and cheddar cheese over the top. Return to the oven uncovered for 15–20 minutes.
  6. If you like a bit of crunch, sprinkle the French fried onions on top during the last 5 minutes of baking.
  7. Garnish with chopped fresh parsley and serve hot.
