- 2 cups cooked and shredded rotisserie chicken
- 1 ½ cups long-grain white rice, uncooked
- 1 (10.5 oz) can cream of chicken soup
- 1 (10.5 oz) can French onion soup
- 1 ¾ cups low-sodium chicken broth
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- ½ cup French fried onions (optional, for topping)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Begin by setting your oven to 350°F (175°C). Grab your 9×13-inch casserole dish and grease it with a little cooking spray or butter.
- In a large mixing bowl, whisk together the cream of chicken soup, French onion soup, and chicken broth until the mixture is smooth and well-combined.
- Stir in the uncooked rice, garlic powder, black pepper, and the shredded rotisserie chicken. Ensure everything is well mixed.
- Pour the mixture into the greased casserole dish, cover with aluminum foil, and bake for 45 minutes.
- Remove the foil and sprinkle the shredded mozzarella and cheddar cheese over the top. Return to the oven uncovered for 15–20 minutes.
- If you like a bit of crunch, sprinkle the French fried onions on top during the last 5 minutes of baking.
- Garnish with chopped fresh parsley and serve hot.
