- 8 small flour tortillas
- Fajita Seasoning:
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Juice of 1 lime

- Begin by placing the chicken strips in a large bowl. Add half of the olive oil, the freshly squeezed lime juice, and all the prepared fajita seasoning. Toss the chicken strips until each is evenly coated with the marinade. Allow the chicken to sit for 15 to 30 minutes. For an even deeper flavor, consider marinating overnight in the refrigerator.
- Heat the remaining olive oil in a large skillet over medium-high heat. Once the oil is shimmering, introduce the marinated chicken to the skillet. Cook for about 5 to 7 minutes, ensuring the pieces are fully cooked and develop a slight char for extra flavor. Remove the chicken from the skillet, setting it aside temporarily.
- Using the same skillet without washing it, add the sliced bell peppers and onions. Sauté these for about 5 to 6 minutes. They should become tender, and the edges will begin to caramelize, adding to the dish’s complexity and taste.
- Return the cooked chicken to the skillet with the sizzling vegetables. Toss everything together thoroughly, allowing it to heat through and mix well. This ensures each bite offers the complete experience of chicken, pepper, and onion.
- Take a moment to warm your tortillas in a dry skillet or a microwave. Once ready, serve the savory chicken and vegetables nestled within the tortillas. Enhance with toppings such as sour cream, guacamole, salsa, or shredded cheese as desired.
