  • 4 boneless skinless chicken breasts (8 ounces each)
  • 1 cup all-purpose flour
  • 1 teaspoon kosher salt
  • 1/2 teaspoon white pepper
  • 8 tablespoons butter (divided)
  • 4 tablespoons extra virgin olive oil (divided)
  • 1 pound cremini mushrooms (sliced)
  • 1 medium sweet onion (cut into strips)
  • 1 tablespoon garlic (minced)
  • 1/4 cup dry sherry wine
  • 3 tablespoons all-purpose flour
  • 1 cup chicken stock
  • 1 1/2 cups heavy cream
  • 8 ounces Muenster cheese (sliced)

Instructions

  1. Start by prepping your chicken breasts. Butterfly each one by slicing them horizontally and then cutting them in half, which gives you eight pieces in total. Dredge the chicken pieces in a seasoned flour mix made of all-purpose flour, salt, and white pepper.
  2. Preheat your oven to 375°F (190°C). Lightly coat a 9×13-inch casserole dish with non-stick spray. Set the dredged chicken aside.
  3. In a large sauté pan, melt half of the butter with half of the olive oil over medium heat. Brown the chicken for 2-3 minutes per side, then transfer to the casserole dish.
  4. Add 2 tablespoons of butter and 1 tablespoon of olive oil to the pan. Sauté the cremini mushrooms until browned, about 5-7 minutes, and layer over the chicken.
  5. In the same pan, add the remaining butter and oil, sauté the sweet onion for about 3 minutes, then add garlic, followed by sherry wine, cooking until evaporated.
  6. Sprinkle in remaining flour; slowly stir in chicken stock and then heavy cream. Cook until bubbling.
  7. Pour the cream mixture over the casserole, top with Muenster cheese, cover with parchment, and foil. Bake for 20 minutes, uncover, then broil until golden brown.

Notes

Ensure not to overcrowd the pan while browning the chicken to avoid steaming.
