Ingredients

  • 8 ounces uncooked pasta (your choice, such as penne or fettuccine)
  • 1 tablespoon olive oil
  • 2 tablespoons butter, divided
  • 2 chicken breasts, cut into bite-sized pieces
  • 1/4 teaspoon garlic powder
  • Flour, for dredging
  • 8 ounces cremini mushrooms, sliced
  • 1/2 cup marsala wine
  • 1/2 cup chicken broth
  • 1/2 teaspoon Dijon mustard
  • 1/2 cup heavy/whipping cream
  • Salt & pepper to taste
  • Freshly grated parmesan cheese (optional, to taste)

Instructions

  1. Begin by filling a large pot with water and setting it over high heat. Once the water comes to a boil, add a generous amount of salt. Add 8 ounces of your preferred pasta and cook according to the package directions until al dente. Drain the pasta and set it aside.
  2. Season chicken pieces with garlic powder and a light dusting of flour. In a large skillet, heat olive oil and butter over medium-high heat. Cook chicken until lightly golden, about 5 minutes. Transfer to a plate.
  3. In the same skillet, add remaining butter and mushrooms. Sauté for 3-4 minutes until golden-brown.
  4. Add chicken broth and marsala wine to the skillet. Stir in Dijon mustard and let simmer for 2 minutes.
  5. Return chicken and sautéed mushrooms to the skillet. Fold in the heavy cream, cooking until sauce thickens.
  6. Add drained pasta to the skillet, tossing to coat in the sauce. Season with salt and pepper, and sprinkle with Parmesan cheese. Serve hot.

Notes

You can swap chicken for shrimp or turkey and add vegetables like spinach for extra nutrition.
