Description

A delightful one-pan dish that combines Chicken Parmesan with pasta in under 35 minutes.


Ingredients

  • 1 lb chicken breasts, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 1 tablespoon Italian seasoning
  • 1 teaspoon red pepper flakes (optional)
  • 8 oz penne pasta
  • 2 cups mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Heat a tablespoon of olive oil in your large skillet over medium heat. Add the cubed chicken, seasoning them lightly with salt and pepper to enhance the flavors. Allow the chicken to cook for 6-7 minutes, stirring occasionally, until they’re golden brown and thoroughly cooked. Transfer to a plate and set aside.
  2. In the same skillet, add the chopped onion and sauté for about 3-4 minutes until it’s soft and translucent. Stir in the minced garlic, and cook for an additional 30 seconds. Add diced tomatoes, tomato sauce, a tablespoon of Italian seasoning, and red pepper flakes if desired. Cook for about 5 minutes.
  3. Add the penne pasta along with 1 1/2 cups of water. Stir to ensure all pasta is submerged, bring to a boil, reduce heat to a simmer, and cover. Cook for 10-12 minutes or until the pasta is al dente and water has evaporated into a silky sauce.
  4. Return the reserved chicken to the skillet. Sprinkle with the shredded mozzarella and grated Parmesan, cover, and cook for another 3-4 minutes until cheeses melt.

Notes

Use freshly grated cheese for better melting and flavor.
