- 2 large apples, halved and cored
- 2 cups cooked chicken, shredded
- 1/4 cup mayonnaise
- 1/4 cup Greek yogurt
- 1/2 cup chopped pecans
- 1/4 cup dried cranberries

- 1 tablespoon Dijon mustard
- 1 teaspoon honey
- Salt and pepper to taste
- Lettuce leaves for garnish
Instructions
- In a spacious mixing bowl, whisk together the mayonnaise and Greek yogurt until well blended. Add Dijon mustard and honey, season with salt and pepper.
- Add the shredded chicken, chopped pecans, dried cranberries, and fresh parsley. Gently fold together until coated with dressing.
- Halve and core the apples; place a lettuce leaf atop each apple half.
- Portion the chicken salad over each apple half.
- Serve immediately or refrigerate for a short while.
