  • 2 large chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 tablespoons olive oil
  • 3 tablespoons butter
  • 6 garlic cloves, minced
  • ¼ teaspoon red pepper flakes
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped parsley
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • ½ cup grated Parmesan cheese
  • ¼ cup finely chopped onion (optional)

Instructions

  1. Slice each chicken breast horizontally to create thin cutlets. Season both sides generously with salt and pepper.
  2. In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat. Sear the chicken cutlets for about 4–5 minutes on each side until golden brown and cooked through.
  3. Reduce heat to medium, add 2 tablespoons of butter, minced garlic, and red pepper flakes to the pan. Stir in lemon juice and parsley, returning the chicken to the pan to absorb the flavors.
  4. In a separate pot, melt another tablespoon of olive oil, add garlic, rice, and onion (if using), and toast lightly. Pour in chicken broth, simmer on low heat until rice is tender, around 15–18 minutes.
  5. Fluff the rice, fold in Parmesan and parsley. Serve the rice topped with chicken and scampi sauce.

Notes

For a milder dish, reduce red pepper flakes. Feel free to experiment with protein substitutions like shrimp or tofu.
