This Indian-inspired delicacy is adored for its perfect balance of savory spices and creamy textures, making it a perennial favorite.
Ingredients
Scale
- 1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 2 teaspoons garam masala
- 1 teaspoon turmeric powder
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 1 teaspoon salt
- 3 tablespoons butter or ghee
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 (14 oz) can crushed tomatoes
- 1 cup heavy cream
- Fresh cilantro, chopped (for garnish)
Instructions
- Begin by combining the yogurt, lemon juice, ground cumin, coriander, garam masala, turmeric, paprika, chili powder, and salt in a large bowl. Add the chicken pieces, ensuring each piece is well-coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least one hour, or ideally overnight, to enhance the flavor infusion.
- Melt butter or ghee in a large skillet over medium heat. Add the finely chopped onion and sauté until golden brown, which will take roughly 5 minutes. Introduce the minced garlic and grated ginger, cooking for an additional minute until the mixture is aromatic.
- Add the crushed tomatoes to the skillet, stirring to combine with the onions, garlic, and ginger. Allow the mixture to simmer for about 10 minutes, letting the flavors meld together.
- Add the marinated chicken to the tomato base and cook until the chicken is browned on all sides, about 5–7 minutes. Ensure all sides of the chicken receive uniform heat for even cooking.
- Reduce the heat to low and pour the heavy cream into the skillet. Let the contents simmer for 15–20 minutes or until the chicken is fully cooked and the sauce has thickened. Garnish with fresh cilantro before serving hot alongside basmati rice or naan bread.
Notes
Marinate the chicken for at least an hour; overnight is ideal for maximum flavor absorption.
