- 1 package (9 oz) cheese tortellini
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
- 1/2 teaspoon Italian seasoning
- 2 tablespoons butter
- 1/4 cup grated mozzarella cheese
Instructions
- Start by preparing the cheese tortellini according to the package instructions. Bring a pot of salted water to a boil, then add the tortellini. Cook until they are tender, typically around 3-5 minutes. Once cooked, drain the tortellini and let them sit while you move on to the next steps.
- While the tortellini is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Season both sides of the chicken breasts generously with salt and pepper. When the oil is hot, carefully place the chicken in the skillet. Sear the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown. Once cooked, remove the chicken from the skillet and let it rest on a cutting board.
- In the same skillet, melt 2 tablespoons of butter over medium heat. Once melted, add in the minced garlic and sauté for about a minute, being careful not to let it burn. Pour in 1 cup of heavy cream and 1/2 cup of chicken broth, stirring to mix. Bring this mixture to a gentle simmer and let it cook for 3-5 minutes.
- Once the sauce has thickened, stir in 1 cup of grated Parmesan cheese along with 1/2 teaspoon of Italian seasoning. Mix well until the cheese is fully incorporated and the sauce becomes smooth and creamy.
- Slice the cooked chicken into strips and return it to the skillet with the Alfredo sauce. Gently fold in the drained tortellini, tossing everything together until each piece is coated in that creamy sauce.
- To finish your dish, sprinkle some grated mozzarella cheese on top and let it melt slightly before serving. Add a sprinkle of freshly chopped parsley for a burst of color and freshness.
