- For the Chicken Marinade:

- For the Tzatziki Sauce:
- 1 cup plain Greek yogurt
- 1/2 cucumber, grated and squeezed dry
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1 tbsp fresh dill, chopped
- Salt and pepper, to taste
- For Assembly:
- 2 cups cooked rice, quinoa, or cauliflower rice
- 1 cup cherry tomatoes, halved
- 1 cup diced cucumber
- 1/2 red onion, thinly sliced
- 1/4 cup Kalamata olives
- 1/4 cup crumbled feta cheese
- Fresh parsley or dill, for garnish
Instructions
- Begin by preparing the marinade in a medium bowl. Whisk together the olive oil, lemon juice, dried oregano, minced garlic, smoked paprika, and a pinch of salt and pepper. Once your mixture is well combined, add the chicken breasts or thighs, ensuring they are fully coated in the marinade. Cover the bowl with plastic wrap or a lid, and refrigerate the chicken for at least 15 minutes — this allows the flavors to infuse. If you have time, marinating for up to 24 hours will yield even more intense flavors.
- Once marinated, heat a skillet over medium heat and add a drizzle of olive oil to coat the pan. Place the marinated chicken in the hot skillet and cook for about 6 to 7 minutes on each side. The chicken should turn a nice golden hue and reach an internal temperature of 165°F (75°C). After cooking, remove the chicken from the skillet and allow it to rest for around 5 minutes before slicing it into strips. Resting will keep the chicken juicy and tender.
- While the chicken is resting, it’s time to make the tzatziki sauce. In a separate bowl, combine the plain Greek yogurt, grated cucumber (remember to squeeze out excess moisture), olive oil, lemon juice, minced garlic, fresh dill, and a pinch of salt and pepper. Mix until you achieve a smooth and creamy consistency. This sauce not only adds flavor but also serves as a refreshing contrast to the savory chicken.
- Now comes the fun part — assembling your Chicken Tzatziki Bowls! Start with a base of cooked rice, quinoa, or cauliflower rice in each bowl. Add the sliced chicken on top, followed by the halved cherry tomatoes, diced cucumber, thinly sliced red onion, Kalamata olives, and crumbled feta cheese. Generously spoon tzatziki sauce over the entire bowl or serve it on the side for dipping. Finish off with fresh parsley or dill for garnish, adding a pop of color and flavor.
