Ingredients
Scale
- 1 lb ground chicken
- 1 cup grated zucchini, squeezed of excess moisture
- 1/4 cup almond flour (or breadcrumbs)
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1/2 tsp paprika
- 1/2 tsp dried oregano
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine all ingredients: ground chicken, grated zucchini, almond flour, Parmesan cheese, egg, garlic, paprika, oregano, salt, and pepper.
- Mold mixture into small patties (about 20 total).
- Line a baking sheet with parchment paper and place poppers with space in between.
- Bake for 18-20 minutes or until light brown.
Notes
Ensure the zucchini is well-drained. Your hands can work wonders in shaping the patties—don’t over-mix and keep them tender. Check for doneness by cutting one open for no pink visible.
