- 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 2 medium zucchini, sliced into half-moons or cubes
- 2 cloves garlic, minced
- 1 tsp fresh ginger, minced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp honey or brown sugar
- 2 tbsp vegetable oil
- Sesame seeds or chopped green onions for garnish (optional)
Instructions
- Start by whisking together your stir-fry sauce ingredients in a small bowl. Combine the soy sauce, oyster sauce (if you’re using it), sesame oil, rice vinegar, and honey or brown sugar. Whisk until everything is well blended. This sauce will serve as the flavor base for your Chicken Zucchini Stir Fry, so it’s worth taking the time to mix it thoroughly and set it aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once the oil is hot, add the bite-sized pieces of chicken. Make sure to spread them out in the pan for even cooking. Allow the chicken to cook undisturbed for about 5–7 minutes, or until it’s nicely browned and fully cooked through. Once cooked, remove the chicken from the pan and set it aside to keep warm.
- In the same skillet, add another tablespoon of vegetable oil. With the heat still at medium-high, toss in the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant—you want these aromatic flavors to infuse the oil before adding the vegetables.
- Next, add the sliced zucchini to the pan. Stir-fry the zucchini for around 3–5 minutes until it’s tender but still has a slight crunch.
- Once the zucchini is cooked to your liking, return the chicken to the skillet. Pour the prepared stir-fry sauce over the chicken and zucchini, stirring well to coat all the ingredients evenly. Allow everything to cook together for an additional 2–3 minutes, letting the sauce heat through and slightly thicken.
- After everything is cooked and the sauce has coated your chicken and zucchini beautifully, it’s time to serve. Dish out the stir fry over a bed of steamed rice or cooked noodles for a complete meal.
